I think I would like to do this, but only for two things: Cooking and linguistics.

It's an interesting thought. I would learn more about math (I really suck at it) and more on car maintenance as well as martial arts and gun skills (gotta have some self-defense skills, right?).

I would go for languages, martial arts (Even if I need to physically practice afterward, at least I know WHAT to practice), math, and photography. Yes, it takes an artist's eye to get a good picture- I have that part down. But knowing how to physically do more with my camera than point and shoot- how to adjust its settings to get the best picture in all lights, and even to do special effects like some of what I'm seeing on flickr these days, that would be a huge help.
I'm a cosplayer, so I would also want a buttload of stuff pertaining to sewing, tailoring, prosthetic makeup, and a few other useful skills.
