Although I think a lot of authors got it wrong I don't think it's that when getting staked or exposed to the sun that Vampires would burn instead rather I think it's more tied to their immortality as far as the old tales go and that they turn to dust not ash because once the spell keeping them undead is broken time catches up to them all at once like Dorian looking at a painting.
The older the are the more quickly this means dust. For a vampire still in their mortal life time it would just mean a dead body albeit one aged to the age they currently are so a 20 year old suddenly looking 60.
But hey that's my theory.
