I have some issues with employment laws governing termination. One main one: if terminated, tell the employee WHY they were terminated. There should also be a simple way to dispute the termination as well.

Exactly. Don't pussyfoot around with "you've made mistakes/you're not cut out for X". Say exactly what happened and when...maybe the employee didn't really have anything to do with it. If local/state laws require writeups prior to termination, do it or the firing can't stick.
I found out the hard way that part-time workers here aren't eligible for unemployment.
Also, if a former employer is giving bad references (which isn't kosher, but some do it anyway) you have the right to know who's doing it and what they're saying (and to who, so you're given a chance to head it off).
