Seems to me like it played out like this:
Banker ate at the restaurant, paid by credit card. Wrote the tip, total, and signature on the Guest Copy of the receipt, which he left at the restaurant. Took the (then blank) Merchant Copy home. At some point after that, he or someone else filled in the Merchant Copy with the 1% tip and "Get a real job" note, took a picture of it, and posted it to the internet as a prank.
The server did not take the picture of the 1% tip Merchant Copy of the receipt. The restaurant has never seen it, hence the Guest Copy picture they provided after the Merchant Copy went viral.

Let's go back to the beginning. Jerk goes to True Food Kitchen (judging from price, he goes with a friend). Jerk decides, "Hey, I'm gonna play a prank on the internet LOLOLOL!" Jerk fills out the GUEST copy of the receipt, and leaves that for the waitress. Jerk then takes the MERCHANT copy home with him, takes the picture, does some photoshoppery, uploads picture to a blog. Waits a few hours. Then anonymously posts it to reddit, and sits back and waits for the internet to do its thing.
The restaurant doesn't have the merchant copy anymore. Douchebag took it. Which means that the restaurant may not even get paid for the meal, which makes the dude a double douchebag, IMO.

The only difference between the two copies is the label and the merchant must keep a copy (not specifically the merchant copy) for possible fraud claims. I've had a number of merchants give me the merchant copy before. There's not difference between the two.

Some places there is a difference. at my pizza place there is certain information on the customer copy and other information ONLY on the Merchant copy. the 2 are not just carbon copies of each other. when things happen the Merchant copy is needed because it has the "on that copy only" information.
Note that your mileage may vary depending on the CC processor and company.I'm lost without a paddle and I'm headed up sh*t creek.
