Extreme Couponing.

^I've heard of some of these couponers doing things like clearing out an entire shelf of 30+ bottles of laundry detergent, and point blank refusing to let other shoppers have any, saying to somebody who needed a bottle for regular use "I need all of these for my stash!"

With the stashes some of these couponers keep, I find myself agreeing with an assessment I read somewhere- Some of these stashes look like a more organized form of hoarding.

Nope, it's hoarding, plain and simple... hoarding is about the inability to let stuff go and an unnatural attachment to material things, not about disorganization or bad housekeeping. The two often go hand in hand, but hoarding is its own condition.
